Chettinad Shallot Masala Kuzhambu/Chettinad Vengaya Masala Kuzhambu

Usually prepared with country side vegetables, Chettinad masala kuzhambu can be prepared very well simply with Shallots aka small pearl onions. This fingerlicking no tamarind kuzhambu goes for an easy and quick cooking process. The basic ingredient for this gravy is a coconut based grounded masala. Most of the chettinad gravies calls for grounded spiced coconut paste and that is the best part of their cuisine. My today's post is also prepared with masala paste which calls for freshly grated coconut, cashew nuts, fennel seeds and dry red chillies with sauteed onions and tomatoes. This paste brings wonderful taste, spiciness and definitely the thickness to this simple gravy.

Few of my bookmarked recipes are still sitting sadly to give a try at home. Obviously am trying to clear them one by one. I have been planning for the popular General Tso's chicken for a while, but somehow i couldnt able to dish out. But thank god, i tried my hands with Soya paneer aka Tofu recently. Oh my god, what a easy breezy dish to make at home. I simply loved the mix of sweetness, spiciness and sourness in this dish. This dish makes an excellent side dish to serve along with cooked rice or simply sauteed noodles.

Weather is too hot here, obviously am trying to cook earlier in weekends as well as in weekdays. Since we are crossing the highest level of hot temperature for the past three days, obviously we are sticking to drinking more water and eating salads than having some solid foods. However if you have some hungry tummies around you to feed especially for weekday lunches, you have to stick with some easy breezy dishes to dish and serve them quickly. My today's dish is one among those easy breezy but yet a filling and healthy dish to serve with simple side dishes.

Vegan Raspberry Almond Milk Popsicle

Vegan Raspberry Almond milk popsicle is a prefect summer treat to relish with your near ones with less efforts. My today's post is again a simple popsicles prepared with almond milk and frozen raspberries. Blend everything together with enough sugar and pour the mixture in popsicle mould, freeze it and your popsicles are ready to relish. How simple na, i prepared this popsicle as a vegan version. I used almond milk but trust me rice milk, coconut milk works awesome as well. Not to forget that even any sort of berries  works prefect to make this excellent frozen desserts aka this popsicles.

We are getting some super sweet cherries in our farmer's market since few days. Cherries are my favourite fruits. Mango Sorbet with Smarties

Its getting too hot here in Paris. Though its not officially Summer here, weather is not far from the usual summer temperature. Nothing can beat some homemade refreshing icecreams or sorbets to relish while the weather is hot outside. My today's post is a simple sorbet prepared with fresh mango chunks and mini smarties. Definitely a kid's friendly frozen food to relish without any fuss. I just love the popular 'Gems' those chocolate toffees are my all time favourite, but i dont miss them here as we have smarties here. Smarties replace Gems very well.

Vegan Rice Pudding

Rice pudding, this sweet dish is my daughter's favourite, she loves it very much. Whenever i feel like dishing out simple pudding, i will surely prepare rice pudding. And my today's recipe is a fantastic pudding which calls for easy ingredients. A can of coconut milk or freshly squeezed coconut milk, sugar and rice, these three ingredients is much needed to prepare this easy breezy vegan sweet. I simply flavoured this pudding with vanilla extract. If you want to make a rice pudding with an exotic touch, add some mango chunks or pineapple chunks depending upon your tastebuds. However my today's post is a simple and an elegant dessert to serve after a meal.

Bread Kaja/Fried Sweetened Bread Slices/Fried Bread Slices in Sugar Syrup

I have been looking for an easy breezy desserts or sweets especially for the theme of this week's blogging marathon. Yes my theme for this week's blogging marathon is 'Vegan Sweets'. Though i had few vegan sweets in my mind, accidentally i crossed this bread kaja in Instagram. And this recipe is from Blend with Spices, Hari Chandana shared this recipe's click in Instagram and immediately i fell in love with this incredible bread kaja. Obviously i immediately went through the recipe, and that this sweet is completely vegan. How can i resist to this incredible sweet, my sweet tooth was actually craving for something crispy and sweet, without any hesitation i gathered all the ingredients immediately and prepared this kaja to served as dessert after our sunday meal.

Coconut burfi, this is my all time favourite sweets and nothing can beat the taste of this simple sweets. Whenever my sweet tooth crave for some sweets, i dont hesitate a second to dish this incredible burfi. If you check my blog, you may notice that i have already tried couple of versions of Coconut burfis. My love for this sweets pulled me to dish out some impossible versions of coconut burfis and my today's post is one among those unimaginable version. Actually my today's recipe is completely vegan and gluten free. Trust me this incredible sweet will definitely please anyone's tastebuds as this sweet is completely quick and easy to dish out.

Venezuelan Chicha/Venezuelan Rice Milk/Chicha Venezolana

Venezuelan Chicha, is a popular drink sold by the vendors at street corners, markets, fairs and outlets in commercial centres, malls etc in Venezuela. "Chicha" is made of boiled rice, milk and sugar and served cold with loads of ice cubes. Usually served as a refreshing beverage, cinnamon powder, condensed milk or chocolate are also used as toppings. This  Venezuelan "Chicha" contains no alcohol as it is not fermented.  A lot of Latin American countries have a "chicha" recipe but they are all very different. The Venezuelan Chicha is basically the liquid version of the famous dessert “arroz con leche”, another Latin American staple dessert.

Buñuelos Mexicanos/Mexican Buñuelos

Buñuelos Mexicanos is a popular fritters prepared during Christmas and New year's day. Though Bunuelos do exists as round balls, this flat shaped fritters are a sort of street foods in Mexico served along with hot atole and tamales to keep warm during their festive shopping. These Buñuelos are  light, crispy and round disc once deepfried are sprinkled with cinnamon-sugar or else served with piloncillo syrup. These bunuelos is definitely a very easy breezy fritters to prepare with less efforts. Atol de Elote/El Salvadorian Corn Beverage

Atol de Elote is a popular El Salvadorian beverage, which is prepared with fresh corn kernels, milk, cinnamon and sugar. Traditionally white corn is used in El Salvador to make this delicious beverage, though yellow corn kernels can be used as well. Fresh corn kernels brings a wonderful fresh flavor to this beverage though frozen corn kernels makes excellent Atol de Elote too. Do you know Atoles are very popular beverages in Central America with roots in Mayan Cuisine. And this Atol de Elote is definitely a sort of thick drink often eaten in spoons. And traditionally this drink is served in a bowl made out of a dried calabash gourd.

Vegan Potato & Kidney Bean Masala Toast

If you are looking for an Indianized version of spicy toast, am sure my today's post will definitely tickle your tastebuds. Seriously i dont want to repeat but however couldnt stop myself to say how much we love potatoes. My today's post is a fantastic and definitely a flavourful, very dangerously addictive potato and rajma masala loaded bread toast. Whoever loves spicy toast will definitely fell in love with this incredible toast. Adding bit coarsely mashed rajma aka kidney bean will definitely take this simple toast to an another level. Obviously this toast is seriously a protein rich toast to give a try definitely a home. You can add any beans to make this toast however my choice is kidney beans, i just love this beans very much, never stopped myself to add them in most of my dishes. And this beans is our family favourite.

Strawberry Nutella Toast

Nutella, this spread is one of the most favourite spread of my kids, though i dont get them often. However am trying to keep this spread away from my kids as they are capable to finish this spread within a day without any hesitation. Last week when we went for grocery, the younger one came with us and without our knowledge he grabbed a nutella bottle, we noticed it while we were in cash counter. Obviously we came home with it. Back home after having some french toast with nutella, my younger one asked me a different toast. Since some strawberries were sitting in my fridge, i couldnt resist to prepare this fantastic toast.

Strawberry Chocolate Custard

A simple sweet or dessert is quite enough to celebrate an occasion na, and my today's post is definitely one among those simple sweet or dessert to give a try if you dont have an idea of cook up something new. My today's post calls for very easy and simple ingredients, a couple of ingredients like custard powder, chopped chocolate, sugar and milk is very much needed to dish out this custard. Though i prepared this dessert with Strawberries, you can dish out this same fabulous dessert with any sort of fruits or else with a lovely medley of tropical fruits, its all upto you. Since strawberries started showing their heads in farmer's market, i didnt hesitate a second to grab some juicy,succulent strawberries. Obviously i cant think any other fruits than strawberries to add in this simple trifle like dessert.

Shing Paak/Gujarati Peanut Burfi/Mandvi Paak

Peanut chikki aka brittles, i have rarely seen someone saying no to those sweet bites. When its comes something to dish out sweet with peanuts, everyone at home love to enjoy them. When i was planning for something different to cook with peanuts, i couldnt resist to dish out this easy breezy Shing paak aka Gujarati Peanut burfi.This recipe calls for just three ingredients, yes roasted peanut powder, sugar, cardamom powder and nuts (optional) to decorate. This fantastic Gujarati sweet gets ready very much quickly than you can imagine.Easy to put together, this shing paak have a subtle flavor and definitely this sweet will please anyone's sweet tooth. Shing means peanuts in Gujarat and this Shing paak is a delicious nutritional sweet with wonderful flavor in it.

Mango,Semolina & Coconut Halwa /Mango Suji Sheera with Coconut

Mango, the King of fruit is our family favourite fruit and whenever i get this fruit, i dont hesitate a second to prepare some fantastic dish out of this fruit. Kesari aka Suji halwa which is well known as Semolina pudding is one among the most traditional Indian sweets which is quite often prepared for any occasion quickly as this dish asks for some easy preparation. This lipsmacking semolina pudding is one of our family favourite and my better half love this kesari aka halwa to the core. Since i want to prepare a different version of this pudding, this time i prepared mine with fresh mango puree, dessicated coconut flakes with roasted semolina. Initially i was bit skeptical to try this coconut and semolina combination, but trust me the final result was definitely a droolworthy pudding.

Vegan Grilled Masala Vegetables

I have been posting some delicious grilled vegetarian dishes for the post two days as my theme for this week's blogging marathon is Vegetarian grilling. After a lipsmacking mustard cauliflower steak, and some delicious cheese potatoes, my today's post goes to some Indian spiced grilled vegetables. Indian spices added to any vegetables makes some fantastic dishes and this grilled masala vegetables is definitely a must try if you love Indian spices. You can enjoy this very less oil, spiced and vegan grilled vegetables simply with a bowl of rice or as accompaniment with some rotis or breads. You can adjust the spice level of this grilled vegetables depending upon your tastebuds. I went with a simple Indian spice mixture which calls for red chilly powder,pepper powder, garam masala powder, cumin powder and fennel seed powder.

Grilled Vegan Mustard Cauliflower Steak/Grilled Vegetarian Steak

This week's blog posts are going to be Vegetarian grilling, yes you read it rite. Am gonna post only vegetarian grilling. Though its not still summer here, grilling vegetables or meats have been a part of our menu since am having an electric griller which makes some fantastic grilled vegetables. Obviously weather is not an obstacle for us to prepare some succulent grilled vegetables or meats. A simple Cauliflower steak when spiced with dijon mustard and some dried parsley leaves makes this extremely delicious dish. You can enjoy this healthy vegan steak with your favourite sauce. I cant imagine a picnic without a bread, either its store bought or homemade, we love to carry bread to enjoy if we plan a picnic. When i picked Picnic Hamper as theme for this week's blogging marathon, after tabbouleh i planned immediately to bake an easy breezy bread loaded with onions and grated cheese. Since this bread is already flavoured with sauteed onions, you doesnt need any other spread to enjoy this fantastic bread. Mixed Vegetables Couscous Tabbouleh

Tabbouleh is a must for us while the weather is too hot outside, obviously picnic is much needed once the Sun god shows his face. We wait eagerly for hot weather here after hibernating for almost 6 months under the nasty chilled,snowy climate. You must visit Paris when the weather is hot, you can see easily each and every public gardens will be filled with peoples either taking sun baths or else with their picnic baskets. We love to pack foods for picnic almost every weekend during summer. Obviously Tabbouleh have its important place in our picnic basket as this chilled salad please everyone's tastebuds easily. Tabbouleh is very easy to prepare with simple ingredients. Spiced with pepper powder, salt and olive oil, this tabbouleh is definitely a prefect summer salad to enjoy without any fuss.

Eggless Salted Caramel Pudding

I have a soft corner for salted caramel spread since i have tasted it during our trip to Brittany region in France. This region is quite popular for their crepes and their salted caramel toffees. Obviously whenever our friends make a trip to this region, they never forget to get those salted caramel toffees for us. We just love munching them, but i always want to give a try to a dessert with those salted caramel toffees and this time i prepared this luscious dessert with it. Vegan Raspberry Sago Pudding

My today's post is an easy breezy pudding which is a vegan friendly dessert and adding raspberry makes this pudding more interesting. Sago pearls are made from the inner pith of sago palm tree. The inner pith of the trunk is scraped out, pounded into fine particles, then soaked in water, which dissolves the starch from the fiber. This starchy water is strained through a sieve and dried. The starch that remains after the water evaporates is shaped into pearls. These sago pearls are very much used in Indian cooking to cook many delicious desserts and savory dishes as well.

Potato pancakes aka Raggmunk is one of the most favourite meal of Swedish people and this dish is a must for them, obviously Swedish peoples love this pancakes. Raggmunk is a common dish and Ragg means crispy and munk means donut pan in Swedish.Usually eaten with fried salted pork and Lingonberries, this dish makes a complete meal. Thinly grated potatoes when mixed with egg, flour and spiced with pepper powder and salt, once fried in pan with butter makes this incredible pancakes. Swedish cuisine have varieties of potato based pancakes. Even Raraka is a variety of potato pancake which is known as lacy potato cake as this dish is made just with grated potato and egg without any batter preparation.

Morot-och Russin Sallad/Swedish Carrot & Raisin Salad

Carrot is one of  the Sweden’s most popular vegetables, obviously carrot have their own place in most of their menus. Every little coffee shop serves a slice of carrot cake which is a must in their menu card.If you are eating out in Sweden, lunch is particularly good value as most restaurants will include a serve - yourself salad bar where you can eat as much salad as you want. Sometimes prepared with just a simple dressing, or perhaps mixed with kale, spinach, this carrot salad can be prepared easily with raisins. The crunchniess of the carrots make this salad more interesting and the addition of  sweet golden raisin gives a fabulous sweetness. Of course, the recipe is really pretty international, so Swedish peoples are not alone in liking it.

Broccolisoppa/ Swedish Broccoli Soup

Swedish broccoli soup aka Broccolisoppa is a simple tasty greenish soup which makes an excellent dinner. Or else a super filling lunch as well. Easy to make this Broccoli soup calls for easy cooking and you can also served this fantastic healthy soup as an attractive starter for a party. No sauteeing is needed, obviously this soup calls for easy cooking method. Prepared with vegetable stock or chicken stock, this easy breezy broccoli soup can be prepared easily in a pot without using pressure cooking. You can make this soup with more stalk than the green broccoli heads if you want your broccoli soup slight green in colour. My kids hates healthy dates and raisins, obviously if i want to feed them, i will add them either in cakes or make syrups out of them. But recently i tried my hands in making small bites of chocolate coated raisins, which was a big hit among my kids. We are chocoholic family obviously anything prepared with chocolates goes directly to our favourite food list. Gulab jamun/Gulab Jamoon with ricotta cheese, yes you read it rite. Am so happy to try my hand with this ricotta cheese gulab jamuns. Actually i can get easily ricotta cheese than gulab jamun readymade mix, yes i have to take a train to go Indian stores and have to travel for half an hour, by the way to get ricotta cheese, i have to walk just for 5 minutes to get a box of this ultimate cheese. Obviously when i crossed this recipe from Savitha's kitchen, i was super excited to give a try. Trust me this jamun came out extremely delicious and the dough gets ready very much easily too.

Double Chocolate Banana Cake

Feel like giving a second life to some over ripen bananas, then dont forget to take a look at this beautiful double chocolate cake. A prefect teatime snack cake to give a try. Easy to whisk and  bake this cake will definitely please anyone's tastebuds. Since we are chocoholic, i dont forget to add chocolate in most of my bakes. I dunno how many tons of chocolates i have used in my baking since ever i started baking at home. Chocolates are our weakness, obviously i love to have them often in our diet. Though i get varieties of chocolates here, my favourite is always 70% dark chocolate. Do you know this dark chocolate is loaded with magnesium. Dark Chocolate Almond Fudge

Fudge, these dangerously addictive toffee like chocolate bites are my kids most favourite. Obviously whenever i get a tin of sweetened condensed milk, i dont forget to dish out some fudges with it. Yes sweetened condensed milk is a must if you want to prepare your fudges easily at home. Though i have already tried couple of fudges, i couldnt stop myself to post this easy breezy dark chocolate fudge with almonds. Adding almonds to this fudges make this bites more crunchy and delicious. However fudges can be prepared with varieties of nuts or else as nutless. Its all depends upon you and your tastebuds. We love crunchy and chewy fudges hence i have added nuts in it.

Heart Shaped Butter Cookies

I have baked couple of cookies during last weekend, after posting few for Valentine's day special recipes, i have two more cookies to post. Since Valentine's day is around the corner, am posting this dangerously addictive heart shaped butter cookies baked with two colour doughs. This butter cookies takes hardly less than an hour to get ready. A prefect cookie to pack and gift as well. This cookie is prepared without any cookie cutter as i wasnt able to spot out my collection of cookie cutters. Hence i used my hand to shape these cuties. Hope they looks very much like hearts na.

Chocolate Coconut Peda/Chocolate Dhoodh Peda/Chocolate Coconut Milk Fudge

Pedas, this milk sweets are easy to dish out if you have mawa or crumbled paneer at home. Since ever i tried milk sweets with chocolate flavor, my kids were pestering to make some pedas with chocolate. Obviously i couldnt stop myself to prepare some quick pedas with paneer at home. Very easy to make this peda calls for some dessicated coconut as well, however freshly grated coconut works awesome as well. But i was quite skeptical to use fresh grated coconut and went with dessicated coconut. Though i used 2 tablespoons of coconut flakes, this peda tastes fabulous with mild chewy texture coz of the coconut flakes.

Whole Wheat Jaggery Cake

I have been trying to add jaggery in our diet often especially the palm jaggery. Recently i got a packet of organic jaggery from my nearby organic store and it tempted me to give a try to a cake. Hence i baked this easy breezy wholewheat jaggery cake. If you are a reader of my space, you might know very well that i wont forget to add chocolate chips if am trying something new in baking. Obviously i couldnt resist to add some chocolate chips in this simple cake. An excellent cake to give a try if you want to keep yourself away from sugar. However, this cake will come out bit dark in colour apart from it, you wont miss anything. I loved the flavor of this cake and none noticed that i prepared the cake batter with the humble ingredient 'Jaggery'.

Vegan Sweetcorn & Bellpepper Pulao

My today's post is a very simple and super flavourful pulao, which you can dish out with less efforts, as this one pot meal doesnt calls for any chopping or grinding. Flavoured simply with garam masala powder, this pulao calls for easy ingredients like corn kernels and diced green bellpepper chunks. Broken wheat/Godhuma Rava/Cracked Wheat/Dalia/Godhuma Nooka is a super healthy ingredient with all the nutrients in it. This broken wheat replace very well rice especially in Diabetic friendly meals. I have been cooking with broken wheat since a long as this healthy ingredient is one of my favourite after quinoa. After cooking couple of delicious dishes out of this broken wheat, am yet to try many more fantastic dishes with this grain. Kiwi & Banana Smoothie

Kiwi, this fruit is loaded with vitamins and we get this fruit throughout the winter just to boost our immune system to afford the chilled weather. Its adviced to take this fruit especially during winter atleast thrice a week. However kiwi fruit have its important place in our fruit basket. Once Kiwi shows their heads in fruit stalls, i dont forget to grab some to please our tastebuds. Obviously i dont forget add them in salads, in most of my bakes or else in smoothies. Smoothie prepared with Kiwi will definitely please everyone, if banana is added to it, trust me this smoothie will definitely become the most favourite of everyone.
